for 16 cookies you need
2 egg whites
1/3 cup white sugar
1.5 cups unsweetened shredded coconut
1 tsp vanilla
2 tsp apricot jam
Preheat the oven to 325.
Line a cookie sheet with parchment paper.
Heat the jam in microwave for a few second, or warm it in a pan on the stove.
Mix all the ingredients until well combined.
put 1 tablespoon of the mixture on the cookie sheet 2 cm apart.
Bake for 7 minutes, check them if they are browning the same at the top and the bottom, let them bake for another 2 minutes.
But if they are brown more at the bottom than top, broil them for 2 minutes, and watch them carefully, they go from perfect to burnt in seconds.
Cool them on the cookie sheet for 5-10 minutes, then transfer to cooling rack to cool.
