120 g Walnut
120 gr Sugar
2 egg whites
1 tsp Cocoa powder (optional)
Ground the walnut with the sugar in the food processor.
In a double boiler on medium heat cook the walnuts and the egg whites (and cocoa powder if using) for 6-7 minutes.The dough should be warm, not hot.
Transfer the dough to a piping bag and pipe small circles of the dough (a quarter size) onto a parchment paper lined baking sheet. leave 2 inch space between the cookies.
Bake at 320 for 15 minutes. cool on the baking sheet and transfer to wire rack to cool completely.
This makes about 30 small cookies.
