Date and Walnut Cake
175g chopped dates
200ml boiling water
3/4 tsp baking soda
230g flour (30% white 70% whole wheat)
2 tsp baking powder
1 tsp cinnamon
1/8 tsp nutmeg
pinch of salt
60 grams softened butter
65g brown sugar
60g chopped walnut
Mix the dates with baking soda and boiling water, leave for 5 minutes.
Preheat the oven to 350.
Mix flour, baking powder, salt and cinnamon, set aside.
Cream the butter and the sugar, add the egg mix well, add the date mixture.
Fold in the flour and the walnuts.
Bake in a 7 inch round cake tin for about 45 minutes. Cool 10 minutes in the tin, then cool completely on the wire rack.
