Raisin Cake

  • 150 grams Raisin
  • 3 eggs
  • 1 tsp vanilla
  • 150 ml yogurt
  • 150 ml oil( I used half coconut oil and half canola oil)
  • 100 grams sugar
  • 140 grams Flour
  • 2 tsp Baking powder
  • 1/4 tsp salt
  • 1 tsp Cinnamon

Soak the raisins in warm water.
Beat the eggs, vanilla, yogurt, sugar and oil for about 5 minutes.
Mix the flour, baking powder, salt and the cinnamon.
Add the flour mixture to the egg mixture and fold in the drained raisins.
Pour batter in a 8″ round cake pan and bake at 350 for about 40-45 minutes.
you can broil the cake for 2 minutes to get a better color on top and dust it with powder sugar.
