Sweet Buns (noone shirmal)
- 50 grams soffened butter
- 4 Tbsp sugar
- 1 egg
- 1 cup lukewarm milk
- 1 Tbsp active dried yeast
- 380 grams unbleached all purpose flour
- 1/2 tsp salt
- Filling: you can use jam, Nuttela, I used homemade chocolate almond butter Or you can skip the filling and make them plain.
- 1 egg yolk
- 2 Tbsp sesame seeds
In a stand mixer mix butter, sugar and the egg. With the motor running slowly add the warm milk and the yeast.
turn off the mixer and let it rest for 10 minutes.
Add 300 grams of the flour and the salt to the mixer mix and add more flour till the dough leaves the side of the bowl.
The dough will be sticky, that’s ok, Don’t add too much flour.
Grease your hands with a bit of vegetable oil and take the dough out of the bowl. Shape it into a ball and return it to the mixure bowl, cover let it rest for about an hour.
Divide the dough in 10. Roll each piece into a 9″ by 1.5″ rectangle spread your filling in the middle and pinch in the sides to cover the filling. roll with your hands to make sure all the sides are closed.
Start from one end and spin the dough to a bun shape, or whatever shape you like,
Put them on a parchment paper lined cookie sheet, Cover with a tea towel and let them rest.
Preheat your oven to 350.
Brush the buns with an egg yolk and sprinkle with some sesame seeds.
Bake the buns for 17 minutes, rotate the cookie sheet and broil them for 3 minutes (watch them carefully) when you’re happy with the color, take them out and cool on a cooling wrack.
