Grain free granola with coconut and cocoa powder

This is perfect for ice cream topping or just to snack on.


  • 2 cups of raw nuts
  • 1/3 cup raw seeds

in water and 1 tsp of salt for 24 hours at room temperature.

Drain them well and dry on a clean tea towel and Ccop them in food processor, set aside.

  • 2 tbsp melted coconut oil
  • 1 tbsp cocoa powder
  • 1/2 cup of honey
  • 1 tsp vanilla

Whisk together till the cocoa powder is dissolved.

Coat the chopped nuts with honey mixture, add

  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup shredded coconut

Mix well.

Spread the nuts on a parchment paper line cookie sheet and dry in the oven for 3 hours at 170. Stir every hour till they are dry.
Turn off the oven and leave them in there for another hour.

When they’re cooled store them in a glass jar.
This makes about 3.5 cups.
