Coconut Loaf Cake

  • 1 cup unbleached white flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 whole eggs
  • 1/2 cup white sugar
  • 1 tsp coconut extract or vanilla
  • 1/2 cup melted Coconut or vegtable oil
  • 1/2 cup plain yogurt
  • 1 cup + 1 Tbs shredded sweetened coconut

Preheat your oven to 350.
Grease a loaf pan and line the bottom with parchment paper.
Mix flour baking powder and the salt together.You may sift them or just use your whisk to mix them.
Beat the eggs, sugar and coconut extract for about 5 minutes.
Then add the oil along with yogurt.
Using a spatula add the flour mixture and the coconut. Tip the batter into a greased loaf pan.
Sprinkle the top with some coconut and bake for about 30-35 minutes until a wooden skewer inserted in the middle of the cake comes out clean.
