Cinnamon Waffle with caramelized Bananas

  • 1 cup whole wheat flour
  • 1 cup unbleached all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 tbsp cinnamon
  • 1 1/3 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup vegetable oil
  • Whipped cream, Maple syrup and cinnamon to serve

Mix the dry ingredient in a big bowl.
Mix the milk, eggs vanilla and the oil, add to the dry ingredient.
Let the mixture sit for 5 minutes, meanwhile heat your waffle iron.
I have the small round waffle iron and this batter makes 5-6 waffles.

For the Banana topping:

Heat 1 tbsp oil in a nonstick pan, sprinkle with 1 tbsp brown sugar and top with 2 sliced bananas.
Cook for a 5 minutes on medium, stir carefully so you don’t break up the bananas too much.

Top you waffles with maple syrup, caramelized bananas, whipped cream and dust with cinnamon.
