Cabbage and Carrot Rice
2 cups shredded cabbage
2 medium grated Carrots
1 medium onion
300 grams ground beef or chicken
1 tsp turmeric
1 tsp paprika
1.5 tsp salt divided
1 tsp ground black pepper
1/2 tsp Saffron powder
1 tbsp barberries
1 tbsp silvered pistachio
1 1/2 cups rice washed, soaked in salted water for 2 hours
Saute the cabbage in 2 tsp of oil on high heat for 5 minutes, add the carrot, saute for 3 more minutes, add 1/2 tsp salt set aside.
Saute the onion and meat in 1 tbsp of oil. add the spices except saffron and saute for 5 minutes on high heat, add the cabbage and carrot mixture.
Turn off the heat, add the saffron, barberries and pistachio and mix well.
Cook the rice in boiling water for 5 minutes, drain.
Layer the rice and the meat mixture in the pot.
Cover the pan and cook on low for 45 minutes.
